Snickerdoodles

1 cup shortening
2 eggs
1 1/2 cups sugar
2 3/4 cups flour
2 tsp. cream of tartar
1 tsp. baking soda
Pinch of salt

Can use the same amount - 1 cup - of butter in place of the shortening, which is 2 sticks or 225g. 

Cream butter, sugar, and eggs until light and fluffy.  Gradually mix in dry ingredients until well blended.  Optional:  refrigerate dough for an half hour or so for easier shaping. 

Mix ~1 Tbsp. each of cinnamon and sugar in a shallow dish or bowl.  Form dough into balls; dip and slightly press into cinammon-sugar mix.  Bake at 180* (350*F) for 8-10 mins., until they just begin to golden. ✨
