Gravy

3 Tbsp. or 42g butter
1 1/2 Tbsp. minced shallot
1/3 cup minced mushrooms
3 Tbsp. flour
2 cups vegetable broth
3 Tbsp. soy sauce
1/2 cup milk
1 Tbsp. sherry (or red or white wine, Sekt, Weinessig)
1 tsp. thyme (1 Tbsp. minched if fresh)
1 pinch salt and pepper

Melt the butter and then sautée shallots & mushrooms.  Add flour to create roux then gradually add vegetable broth.  Cook until thickened and then add rest of the ingredients. Continue cooking until desired thickness and remove from heat (will thicken as it cools as well).
