Chili

2 Tbps. oil
2 onions, chopped
3 cloves garlic, minced
2 cups peeled and diced tomatoes with juice (original recipe calls for a 14.5 oz. can)
1 bottle dark beer
1 cup strong brewed coffee
1 1/2 cup tomato paste (original recipe: 12 oz.)
1 3/4 cup beef broth (original recipe: 14 oz.)
1/2 cup brown sugar
3 1/2 Tbsp. chili powder
1 Tbsp. cumin seeds
1 Tbsp. cocoa
1 tsp. oregano
1 tsp. cayenne pepper
1 tsp. coriander
1 tsp. salt
6-7 cups cooked* kidney beans (original recipe: 4x 15 oz. cans)
4 fresh hot chili peppers, seeded and chopped
4 cups veggies (to replace meat volume in original recipe):  sweet potatoes, corn, etc.

Sautée onions & garlic, then add everything else and simmer ~90 mins.

*~2 cups of dried beans becomes ~6 or 7 cups after soaked & cooked
Total bean & veggie volume is ~10-11 cups.
z.B.: 3 cups beans, 3 tomatoes, 1 paprika, 3 sweet potatoes, 1 jar of corn. Juice from jar of corn is ~3/4 cup.
