Carrot Cake

3 cups flour

2 cups sugar

2 cups boiled, cooled, mashed carrots

1 ½ cups vegetable oil

2 tsp baking powder

2 tsp baking soda

2 tsp cinnamon


Mix and then add:

4 eggs

½ cup walnuts

Bake at 350 for approximately 35 min.

Frosting: ½ cup milk

2 ½ T flour

Boil to a thick paste and cool.

Cream ½ cup butter for approximately 4 min. Then add ½ cup sugar and beat for another 2 min. Add paste and cream until thick.



Pumpkin Roll

3 eggs

1 cup sugar

2/3 cup pumpkin

1 tsp lemon juice

¾ cup flour

1 tsp baking powder

2 tsp cinnamon

½ tsp ginger

½ tsp nutmeg

½ tsp salt


Beat eggs for 5 min at high speed. Gradually add sugar. Stir in pumpkin and lemon juice. Mix dry ingredients and fold into pumpkin mixture. Spread on heavily greased 15x15 inch shallow baking pan. Bake at 375 for 10 min. When baked, turn out on dish towel with powdered sugar. Roll cake in towel while still hot. Cool.

Filling: 1 cup powdered sugar

8 oz cream cheese

4 T butter

1 – 2 T pumpkin

½ tsp vanilla

 

Mix and spread on cooled roll. Chill. Sprinkle powdered sugar over outside of roll before serving.
