Potato Salad

6 large potatoes
1 small onion
Some celery
2 hard boiled eggs

Dressing: 2 eggs, beaten
½ cup sugar
3 T flour
½ cup cider vinegar
1 cup water
½ tsp salt
1/8 tsp pepper

 

Mix in order and boil until thick. Cool and mix with potatoes, etc.

Jennie's notes:  dressing amount is enough for ~15-20 or ~1kg potatoes.  To boil eggs:  put in small pot with cold water, bring to a boil, remove from heat and let sit in hot water for 10-15 mins., remove and put in or rinse with cold water, let sit in fridge for a bit, then crack, chop and mix into salad.
