Bake Sale Lemon Bars

1 1/2 c. Flour

2/3 c. Powdered Sugar

3/4 c. or 170g Butter

Combine flour, sugar, & butter and pat into a greased 9x13 baking pan.  Bakes at 180*C for ~20 minutes.

Meanwhile, whisk together until frothy:

3 Eggs

1 1/2 c. Sugar

3 Tbsp. Flour

1/4 c. Lemon Juice

Pour over hot crust and bake additional 20-25 minutes at 180* until light, golden brown.  Cool and then dust with powdered sugar.

Grandma Panovec’s Peach Dumplings

(your great, great grandmother i.e. Pappy’s mother’s mother)

2 tsp baking powder

½ tsp salt

2 cups flour

¼ cup milk

2 eggs

Form into dough. Roll to approximately ¼ in thick. Cut into squares. Place clean, whole peach in center of square and sprinkle with cinnamon and sugar and dot with butter. Wrap and seal firmly. Put in rapidly boiling water and cook at least 10 min. Makes 5 dumplings.



Blueberry Slump

(used to make this at the cabin at Lake Minisink)

1 quart of blueberries

1 cup sugar

¼ tsp nutmeg


Mix above ingredients in large frying pan, cover with water and let come to a rolling boil.

Mix: 1 cups flour

1 tsp baking powder

1 cup powdered milk

1 egg

1 tsp sugar (more if want sweeter)

Water to make a batter

Drop on top of blueberry mixture. Cook until batter looks cooked.
