Broccoli Salads

Red Pepper & Goat Cheese

Head or two of broccoli
1 red pepper
3 Tbsp. chopped basil
2 Tbsp. balsamic vinegar
2 Tbsp. olive oil
1/4 tsp. salt
1/4 tsp. pepper
1/4 c. chopped and toasted walnuts
2 oz. goat cheese

Toast nuts & red pepper at 180* for ~10 mins.  Lightly - so it's still crunchy - roast or steam broccoli.  In small bowl, whisk vinegar, olive oil, salt & pepper.  Combine and toss everything.

Bacon & Broccoli

2 heads uncooked broccoli
a few slabs of cooked bacon broken up into bits
1 red onion
1/4 c. red wine vinegar
2 Tbsp. sugar
2 tsp. pepper
1 tsp. salt
2/3 c. mayo (or plain yogurt)
1 tsp. lemon juice

Whisk vinegar, mayo, lemon juice, sugar & salt for dressing.
