Cassidy's Carrot Cake

4 eggs
1 1/2 cups oil
2 cups flour
2 cups sugar
2 teaspoons baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1/4 teaspoon salt
3 cups shredded carrots
1 1/2 cups chopped pecans or walnuts

Bake at 180* for ~30 minutes.

Cream Cheese Icing

Combine 16 oz. (~250 grams or 2 boxes) powdered sugar, 1 package (8 oz. or 225 grams) cream cheese, 1/2 cup (113 grams) softened butter, and 1 teaspoon vanilla:  beat until smooth.
