Peanut Chicken Salad

Always a summer favorite for family lunch on the back deck at 3 Brook Lane 😊

1 1/2 Tbsp. creamy peanut butter
2 1/2 Tbsp. oil
^Blend together, then stir in remaining ingredients:
2 Tbsp. soy sauce
2 Tbsp. sugar
2 tsp. white vinegar
1/2 tsp. sesame oil
1/4 - 1/2 tsp. cayenne pepper or tabasco to taste
1 Tbsp. minced scallions
1 Tbsp. minced coriander or crushed coriander seeds if desired/on hand

Mom mixes the sauce with shredded chicken and we used to eat them as sandwiches with lettuce on Martin's potato rolls.

I replace the sugar with 1/2 the amount of honey and the chicken with chickpeas.  Smashed chickpeas work best in these 'salads' so they don't roll away.  Additional veggies:  carrots, cabbage, broccoli, red pepper, etc.  Could also add ginger & cilantro to the mix.  Cucumber slices pair well on a sandwich or as an accompanient, but not diced and mixed in because they're too watery.

To my white bowl filled with smashed chicks, I added 2 shredded carrots, loads of scallions, and doubled the sauce recipe.
