Peanut Chicken SaladAlways a summer favorite for family lunch on the back deck at 3 Brook Lane 😊 1 1/2 Tbsp. creamy peanut butter Mom mixes the sauce with shredded chicken and we used to eat them as sandwiches with lettuce on Martin's potato rolls. I replace the sugar with 1/2 the amount of honey and the chicken with chickpeas. Smashed chickpeas work best in these 'salads' so they don't roll away. Additional veggies: carrots, cabbage, broccoli, red pepper, etc. Could also add ginger & cilantro to the mix. Cucumber slices pair well on a sandwich or as an accompanient, but not diced and mixed in because they're too watery. To my white bowl filled with smashed chicks, I added 2 shredded carrots, loads of scallions, and doubled the sauce recipe. |
