Chocolate Cookies

125g softened butter
1/2 cup sugar
1/2 dark brown sugar
1 egg
1 tsp. vanilla extract
1 1/3 cups flour
1/3 cup cocoa powder
1/2 tsp. baking soda
1/2 tsp. salt
1 Halbbitter Ritter

Beat butter and sugars until smooth and slightly fluffy.  Beat in egg and vanilla.  Add dry mixture and mix on low until mostly combined.  Mix in chocolate.  Chill dough for min. 30 mins.  Bake at 175*C for 7 mins.

PB Choc cookies:  mix in ~1/2 cup peanut butter chunks (made by melting 142g white choclate with 3 Tbsp. peanut butter, harden in fridge, chop it up).

Make mint choc cookies by mixing in mint chips (melt white chocolate, add a few drops peppermint oil, harden & chop).
