Gazpacho

5 large - 9 small tomatoes, quartered & cored (or will be too watery)
1 small cucumber, peeled & chopped 
1 green and/or red bell pepper, cored & chopped
1 small onion, chopped

1 large - 2 small garlic cloves
1/4 c. olive oil

2 Tbsp. vinegar 
3/4 tsp. sea salt
1/2 tsp. fresh ground pepper
1/2 tsp. cumin, optional

Blend half of tomatoes, half of cucumber, half of pepper with everything else.  Transfer to serving bowl.  Blend everything else.  Transfer to serving bowl & combine. Chill for at least 2 hours.
