2 heads of broccoli
1/2 cup toasted nuts (almonds, walnuts)
1/3 cup dried cranberries (or raisins)
1/2 red onion, finely chopped
1/2 cup milk
1/3 cup plain yogurt
2 Tbsp. apple vinegar
1 Tbsp. sugar
3 Tbsp. finely chopped shallot (or the rest of the red onion)

Whisk milk, yogurt, vinegar, sugar & shallot to make dressing; combine everything.

Brokkoli-Dinkelsalat

Lightly sautée 2 cloves of garlic in some olive oil.  Add chopped head of broccoli and the finely grated zest, then juice, of 1 lemon.  Cook a few minutes until broccoli is desired tenderness.  Combine with cooked Bayerischer Reis.  Stir in grated parmigiano.

Cookie & Kate Broccoli Salad

2 heads of broccoli, raw & chopped
1/2 c. sunflower seeds or slivered almonds
1/2 c. finely chopped red onion
1/2 c. grated sharp cheddar cheese
1/3 c. dried cranberries
1/3 c. olive oil
2 Tbsp. apple vinegar
1 Tbsp. dijon mustard
1 Tbsp. honey or maple syrup
1 minced garlic clove
1/4 tsp. salt

Toast the sunflower seeds in frying pan stirring frequently: ~5 minutes.  Pour into large bowl with broccoli, cheese, and cranberries.  In a small bowl, whisk together everything from olive oil down to salt until well blended.  Pour dressing over broccoli mixture, stir until well combined, and let it marinate for at least 20 mins.  Also works great with shredded brussel sprouts & parmigiano.

General Tso

1 Tbsp. sesame oil
3 cloves garlic
1 tsp. ginger
1/2 c. vegetable broth
1/2 c. soy sauce
1/3 c. rice vinegar
1 Tbsp. honey
2 Tbsp. tomato paste
2 Tbsp. flour

In saucepan, heat sesame oil over medium heat.  Add ginger and garlic and stir fry for a minute or so until fragrant.  Add remaining ingredients and whisk to combine.  Simmer 10-15 minutes until sauce thickens; will thicken more as it cools. Sauce has consistency of ketchup.  Adding an extra 1/2 c. of broth and making the 2 Tbsp. of flour generous, thins it out nicely.

Perfect with broccoli, red pepper, chickpeas & Bayerischer Reis!
