Strawberry Cake

2 cups + 3 Tbsp. flour
1 cup sugar
1 tsp. baking soda
1/2 tsp. salt
1 cup strawberry purée
2 tsp. strawberry extract (or vanilla or almond or omit)
1/3 cup or 80 ml olive oil
1 Tbsp. apple cider vinegar or lemon juice
1 egg or flax egg

Preheat oven to 180*.  Combine dry ingredients, then the rest.  Mix with spoon until just combined.  Takes ~15-20 mins. to bake in the white pie dish.  Ice with strawberry buttercream or cream cheese frosting.  Strawberry frosting for icing a 2-layer round cake is 4 cups powdered sugar, 32 g. butter, 1/4 c. strawberry purée and 1 tsp. strawberry extract.  Also delicious simply drizzled with strawberry purée and fresh 🍓

Strawberry Fruit Roll-ups

3-4 cups strawberries

1 Tbsp. or so of honey

1/2 tsp. vanilla extract (optional)

splash of lemon juice (optional)

Line a small baking tray with plastic wrap or parchment paper.  Preheat oven to lowest possible temp.  Puree ingredients together and spread into an even layer on prepared tray.  Bake 6-8 hours or until your fruit is no longer sticky to the touch; check ~4 hours.  Slice and roll.  Can also dry in the sun instead of oven. ☀️

Strawberry Simple Syrup

~2 cups strawberries

1/2 cup water

1/2 honey

Heat honey and water until well combined.  Add strawberries.  Simmer ~20-30 minutes, but don't let it boil.  Mash or blend and pour it into glass bottle or jar. 🍓
