Coffee Cake

Differs slightly from Mama's classic recipe with less butter and sugar, but still decadently delicious with flax eggs, lots of cinnamon and dark chocolate chunks.  If making more a classic, cinnamon-only coffee cake, then Mama's is better. 😊

2 flax eggs (2 Tbsp. finely ground flax + 6 Tbsp. hot water, let sit until gooey)
1 tsp. vanilla
2/3 cup yogurt

1 cup flour
3/4 cup sugar
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
75 grams soft butter

Mix everything from flour to butter on low speed until fine crumbs.  In a separate bowl whisk together flax, vanilla and yogurt.  Add to flour mixture.

Pour half the butter into pan and generously sprinkle with cinnamon and dark chocolate chunks.  Top with remaining batter and bake at 175* for 25-30 mins.
